Earlier this week, James brought home a cookbook for me to review called Paleo Comfort Foods, authored by Julie and Charles Mayfield, Atlanta-area CrossFit affiliate owners. The book is set to be released on Amazon the week of Sept. 12, but those who are eager can go ahead and pre-order a copy now.
The name of the book alone was enough to spark my interest. If you're from the South, you know the meaning of comfort food. If you're female, you know the meaning of comfort food. And if you're pregnant, you undoubtedly know the meaning of comfort food.
Sometimes it's nice coming home and turning to a tried-and-true recipe for dinner instead of figuring out how to make a normal food paleo. Enter, Paleo Comfort Foods.
I haven't concocted as many new recipes as normal, because my appetite has changed and it seems that my brief free time at home after the gym is filled with other tasks, such as researching gazillions of things before baby Hobson comes at the end of the year. Lately, as in the last 4 months, I've resorted to simple dinners and some of my own quick, easy recipes. Sure, they're tasty, but you can only post about them so much.
So when I received this cookbook, it refreshed my passion for cooking and I immediately thumbed through the entire book, earmarking a slew of recipes that I can't wait to try out.
My first two comfort foods to dive into were Tom Kha Gai (chicken coconut soup) and Paleo Gumbo. Though September starts tomorrow, it doesn't equate to fall here in the South. Temps are still in the mid nineties, but I love soups and stews so much that I don't care what the temperature is outside.
Tuesday night, I came home and cranked out the Tom Kha Gai. Food with Asian or Indian flavors are definitely not my forte, so I was thankful of a simple 10-ingredient recipe that I could count on to get the soup flavor I craved. I opted to double the recipe, because that's how we roll in my house, and the only ingredient I couldn't find was Kaffir leaves. But thankfully the book suggested a close substitution of lime zest.
I wish I had some pretty, colorful soup bowls, because this picture doesn't do the soup justice. Our soup bowls are cream, and these freezer containers don't help to show off the soup either. You'll have to trust me when I say it was definitely a soup I'd categorize as a comfort flavor. If I can just make myself hold off thawing these until late fall, I can see myself curled up with a bowl of soup, a cup of hot tea and my Kindle sitting on my then gigantic belly.
I made Paleo Gumbo tonight after I got home from the gym. From the chopping of veggies to the finished product, it took me just about an hour. Not bad for a meal that would feed most couples for days. Too bad we're not most couples. I'll get one serving tonight before I leave for Hilton Head tomorrow, and James will more than likely finish off the rest by midnight tomorrow. He's the only person I know who will eat gumbo at 5am before heading to teach CrossFit classes.
Downing the gumbo and sautéed cauliflower rice as I type this, it's amazing how much flavor comes from a recipe that omits pepper and salt. The only herb it calls for is bay leaves, but even a single bite certainly packs a punch.
I love that the recipe starts off with a roux made from bacon grease, coconut flour and almond flour. Who knows--it could have been that twist on a classic base that made the dish so delish.
I hardly deviated from the recipe. It called for lump crab meat, shrimp and andouille sausage. I subbed chicken for the crab, not wanting to spend a small fortune on an ingredient that James would probably not even pick up on. Much of the great gumbo flavor undoubtedly came from the andouille sausage I picked up at Harry's Farmers Market, so I definitely think it was worth the extra dollar or so I paid for it.
Overall, this was a delicious hearty meal with lots of flavor, despite simple ingredients. I'll definitely prepare several large batches to freeze for after the baby comes.
At least now I feel like a 'good' wife who is leaving her husband for 4 nights with the one thing he cherishes most...good, clean food.

book club? yes, please
When my friend Lauren mentioned starting up a book club, you'd think I'd just won the lottery with the giddiness that I felt. What could be better than an excuse to meet with a group of girls each month to discuss a book, socialize and enjoy appetizers? Well, a little wine wouldn't hurt...but I'll save that for a year from now, post-baby.
Our kickoff meeting was scant in attendance, but not in book ideas or fresh food. We discussed all the book options submitted, and finally settled on one that seemed interesting, but safe, for our first discussion in a month. I can't wait to dive in when I'm in Hilton Head for the long Labor Day weekend.
As with any truly memorable gathering, we enjoyed simple, but delicious food. Lauren, who hosted, was gracious enough to prepare us a taco dinner. Tacos are a lot like salads to me: When someone else prepares them, they seem to taste much better than when I prepare them myself.
Lauren, an avid Trader Joe's shopper, used only the highest quality ingredients. I was a bit jealous, because if my husband didn't eat twice his weight in protein every day, we could afford to buy only organic meat. But as soon as we have a place that accommodates a deep freezer, we're buying a farm-raised cow. I can't wait! Wow, tangent...

As much as I wanted to make a decadent chocolate dessert for the occasion, knowing it was a small crowd meant I would be bringing home too many leftovers. So I opted for a simple fruit dip. In retrospect, semi tart, crisp apple slices would have been the perfect fruit to pair with this dip. Next time, I'll be prepared.
Fruit Dip
Ingredients
- 2 8oz. packages of cream cheese, softened
- 1/2 cup pure maple syrup
- 1/2 cup chopped pecans
- 1 tsp vanilla
- 1/4 to 1/2 cup unsweetened almond milk (depending on how thick you want it)

First off, let me say that I've already been completely overwhelmed with gratitude, and I'm only 21 weeks into this pregnancy!
Not only am I excited about this new path in life, but so many others are excited for me as well. I've received a slew of gifts already, which have left me amazed at the outpouring of support and genuine excitement.
During the CrossFit Games three weeks ago, I made this treat to bring to a gym cookout and viewing of the games. It was quite a sweet treat, so next time I might cut back on the honey and coconut sugar a bit.
Chocolate Cake with Chocolate Icing
Cake Ingredients
3. Transfer mixture to medium mixing bowl, and beat in remaining ingredients.
4. Grease baking pan, then pour in cake batter.
5. Bake at 350 degrees for roughly 25 minutes.
6. While cake is cooling, beat icing ingredients in small bowl until smooth.
7. Ice cake once it has cooled, and enjoy!

halfway there
Today marks 20 weeks of pregnancy! On Wednesday, I had an anatomy ultrasound, where we found out it's a healthy boy!
He's definitely got the Shuler legs, with plenty of meat on them.
I tried to take a photo of the glossy printout, that's why the images appear a bit blurry.
Baby boy is measuring a day or two ahead, to which James said, "Good, I don't want a scrawny baby." I thought that was cute. If history dares to repeat itself, we have no chance of a tiny baby. James was 8 pounds 15 ounces, and I was a whopping 9 pounds, though I was 2.5 weeks late. Crossing my fingers my body is up for this challenge. Looks like it doesn't have the choice :)
Baby boy was moving around like crazy during the ultrasound. He's got so much space at this point he was practically doing flips. He gave me quite a few kicks, especially directly where the sonogram wand was moving. He's a wily one already. The procedure confirmed baby boy is healthy and weighs roughly 11 ounces, and that I am low risk.
So what's happening with my body? Das bump is continuing to expand. Regular shirts are getting much too tight to wear, and my belly band only works with a couple pairs of work pants.
My bump doesn't look super pronounced yet, because I'm gaining weight throughout my core instead of just in one place. But I foresee the move to maternity clothing very soon in my future. I can't fill out any full panel maternity pants, but now they have low-rise styles with elastic waists that hit below your bump. I just found a pair of jeans at Old Navy cut like that. Looking at them on the rack, I was skeptical. But they fit perfectly and I'm hoping I can wear them throughout the fall.
I also scored a full-panel denim skirt that I'll grow into. I'm thinking skirts and dresses with flat boots will be a staple for me this fall. They're more comfortable than pants, and will make me feel pretty :)
At my regular OBGYN appointment last week, I revealed to my doctor that I was still working out, and asked if I should still be doing sit-ups. He replied exactly as I suspected...No. That's fine, I know the dangers of split abs, though it's still more common in women with weak cores instead of strong ones. So for now, I'm retiring my ab mat sit-ups at the gym. I'll resort to plank holds and other safer methods. At least I got in a good 20 weeks doing sit-ups, so I can't complain.
The rest of my CrossFit workouts have been going well. I'm still experiencing the exploding bladder feeling when running, but most of it is just my body tricking itself. I've done quite a few long CrossFit works (25+ minutes) and have felt great doing them. Salvation was the big one this week: 800m run, 30 wall balls, 1000m row, 30 burpees, 200 jump rope and 30 tire flips. I really slowed down on the burpees, simply because I can't fling my belly on the mat like a fish any more. I have to slowly lower myself, without smashing my belly, then push back up. But all in all I feel good, and am about to head out the door for Fight Gone Bad this morning.
I've still got a couple recipes I want to post, and then show off all the free stuff I've been overwhelmed with in the past couple weeks. Stay tuned...
