Saturday afternoon, we kept it classy by washing and vacuuming all the cars in the driveway, then relaxing in the sun in the new chairs while James was perched under the umbrella, which we stuck in the bushes. It was truly a sight to behold--sunbathing in the driveway.
We kept bothering my dad, asking if the boat was ready for a spin. It wasn't--but it will be ready May 7, when we're all coming home again for Mother's Day weekend. To say I'm excited to be out on the water again is an understatement. The Sea Doo should be ready then too, but I've learned to never ride with James or my sister, unless you want a compacted spine (yes, that's an exageration). But they love jumping waves behind big boats and trying to sling you off! I prefer the leisurely ride of a ski boat :)
Saturday afternoon, James and I teamed up to play my grandma, sister and her boyfriend in Hangman. We came up with rhombus for our first word, and my grandma guessed it in three tries. Time and time again, we chose hard words only to lose round after round. Apparently being good in Scrabble doesn't translate well to Hangman. It was a crushing experience. Finally, my brother joined in the last round and we finally won one.
Sunday after church, we enjoyed a big Southern lunch of smoked ham, field peas, macaroni, broccoli casserole, pineapple, homemade biscuits with my dad's homemade muscadine jelly and homemade banana pudding.
Back in Atlanta that night, we went over to our friend Bair's house to use his new grill, which he's been waiting on his condo building to fix for months!
I brought a few pounds of mahi mahi to grill, and whipped up this cauliflower dish from the few ingredients we had in our fridge.
Tasty Cauliflower Mash
Ingredients:
- 1 head of cauliflower
- 3 slices bacon, crumbled
- 4 small tomatoes
- 2 tbsp butter
- 1/4 tsp garlic salt
- 1/3 cup almond milk
- 1/2 log of brie cheese
- herb seasoning
- black pepper
2. Meanwhile, cook and crumble bacon and dice tomatoes.
3. Once cauliflower has cooked, drain water and transfer to large mixing bowl. Blend in butter, garlic salt and almond milk.
5. Blend in diced tomatoes, herbs, pepper and bacon crumbles.

Yum! My boys love a half & half concoction of mashed cauliflower and potatoes, but I've never served just the cauliflower. It looks fantastic! I'll have to try this recipe. Love the addition of the bacon and brie! Thanks for sharing.
